Today’s Sandwich: Leftover Fried Haddock (Homemade)
by Malcolm Bedell on September 9, 2010
While I love a hot, fresh, fried haddock sandwich as much as the next guy (I’m no weirdo), a part of me likes my leftover, “next-day” version even better. Today’s sandwich combines leftover cold fried haddock, mesclun greens, and tartar sauce on a Portuguese roll. Overall, it’s not unlike a really, really chunky and flaky tuna salad sandwich, and like liverwurst, is something I eat in private and then feel badly about afterwards.

My first memories of cooking start in Maine at six years old, when I wore a yellow rainslicker to avoid getting spattered by the bacon I was frying in a skillet. My interest in both Mexican cooking and recreating classic New England dishes from scratch developed while living in Mexico, on a steady diet of pork and habanero peppers. You can see more of my writing and photography online on Serious Eats, the Huffington Post, BlogHer, and Foodista, as well as in print for Downeast, Indulge, and Cigar Snob magazines.

You have your garbage food, I have mine. Good thing we keep separate rooms now.
Why, that plate looks familiar…and a cold haddock sandwich? If I had one right now, I would again be a Completely Happy Woman.
